Tasting Note

Bright cherry, wild raspberry and strawberry with plum, forest-floor and sous-bois notes; hints of spice, marzipan and dark chocolate. Medium–full body, fine-grained tannins, fresh acidity and a long, elegant finish.

Western: roast duck, pork tenderloin, mushroom risotto, beef bourguignon. Asian: Peking duck, char siu, miso‑glazed salmon, teriyaki chicken, shiitake mushroom stir‑fry.


Production Method

Hand‑picked, bunch‑sorted, open‑fermented with cultured yeast, 14 days on skins; matured in French oak barriques (25–30% new).
