Flinty, concentrated Chardonnay with struck-match, honey, ripe pear, melon and stone-fruit notes. Textured mid-palate, subtle cashew/almond savouriness and well-integrated French oak; long saline, elegant finish.
Food Pairing
Western: roast chicken with beurre blanc, pan-seared scallops, creamy mushroom pasta, pork belly, grilled white fish. Asian: sashimi/sushi, miso‑glazed salmon, tempura prawns, Cantonese roasted pork, mild Thai curries.
Production Method
Hand‑picked fruit; entire batch barrel‑fermented; matured 11 months in French barriques and puncheons (≈30% new); no malolactic fermentation; relatively hard pressing and regular lees stirring (batonnage).
