Tasting Note

Black cherry and plum, cassis and dark berry with cedar, tobacco, vanilla and leather. Full-bodied, structured with firm tannins, slatey minerality, warm spice and a long savory finish.

Western: grilled ribeye, roast lamb, beef stew, mushroom risotto, aged cheeses. Asian: Peking duck, char siu (barbecue pork), Korean bulgogi, braised short ribs, miso-glazed aubergine.


Production Method

Hand-harvested; fermented in temperature-controlled stainless steel vats with extended maceration; malolactic in oak and aged ~18 months in French oak (often high % new).
