Tasting Note
Powerful, earthy Pommard: sour cherry, raspberry, fig and vineyard peach with orange peel, violet and clove. Silky entry, ripe acidity, present fine tannins, subtle animal/umami and a mineral, persistent finish.

Western: roast duck, porcini mushroom dishes, braised beef, grilled pork, aged cheese. Asian: shoyu/miso ramen with duck, char siu, Korean bulgogi, shiitake and soy glazed dishes, noodle soups.
Production Method
Hand-harvested from a 1.1 ha monopole; low yields (25–30 hl/ha); traditional fermentation and élevage; aged 18–22 months in French oak barrels (10–15% new).
