Tasting Note
Transparent crimson; vivid red cherry, raspberry and wild strawberry fruit with undergrowth, forest‑floor and pepper spice. Fine, taut tannins, lively acidity and mineral iron notes; integrated light oak adds clove and cinnamon. Energetic, precise, medium-bodied Burgundy.
Food Pairing
Western: roast duck with cherry sauce, mushroom risotto, coq au vin, roast pork, charcuterie; Asian: Peking duck, miso-glazed salmon, teriyaki chicken, mushroom ramen, Korean BBQ (lighter cuts), shiitake and soy dishes.
Production Method
Hand-harvested, organic/biodynamic; indigenous-yeast spontaneous fermentation (concrete vats), aged in large wood with ~10–15% new oak; bottled unfined and unfiltered.
