Tasting Note

Crisp green apple and lemon zest with brioche, toasted almond and subtle sea-spray minerality. Fine mousse, bright racy acidity and a dry, chalky finish with delicate pastry and honeyed autolytic notes.

Oysters and other shellfish, citrus-cured salmon, smoked trout, sushi/sashimi, tempura prawn, light fried chicken, goat cheese, steamed vegetables with soy-ginger dressing.


Production Method

Méthode traditionnelle (secondary bottle fermentation), aged >4 years on lees, minimal dosage; early-picked Chardonnay for high acidity, partial wild fermentation in some vintages.
