Tasting Note

Fine mousse with brioche, toast, meringue, honey, baked apple and nougat; white stone fruit and meyer lemon, savoury-umami lift, creamy texture and bright, persistent acidity. Long, textural finish.

Oysters, sashimi/sushi, perfect sashimi, tempura, steamed or grilled scallops, smoked salmon, miso-glazed fish, light creamy seafood pasta, roast chicken, triple-cream cheeses.

Méthode Traditionnelle (bottle fermented) with extended lees ageing (10+ years) and late disgorgement; low dosage, small-batch estate fruit.
