Tasting Note

Deep ruby with black raspberry, boysenberry, violets, garrigue, black olive, anise and cedar; full-bodied, silky tannins, fresh acidity and a long, savory finish.

Western: roast lamb, daube, beef stew, truffle omelet, aged sheep cheeses. Asian: Korean BBQ (bulgogi), Chinese five-spice pork or char siu, spicy Sichuan beef, lamb curry, miso-grilled eggplant.


Production Method

Biodynamic viticulture; manual harvest; full destemming and light crushing; indigenous yeast fermentation and aging in unlined cement vats for ~2 winters; minimal intervention.
