Tasting Note
Medium-bodied with ripe red and black fruits, garrigue herbs (thyme, rosemary), violet, black olive and pepper. Silky texture, fine tannins, saline minerality and a long savory finish.

Production Method
Hand-harvested; 100% de-stemmed, light crushing; indigenous yeasts; fermented and aged 12–18 months in unlined cement vats; no oak; biodynamic viticulture; minimal/no added SO2 at bottling.

Family-owned Domaine Montirius (Saurel family) in Sarrians. Converted to biodynamics in 1996 and certified Ecocert/Biodyvin from 1999; managed today by Eric and Justine Saurel.
