Tasting Note
Bright red fruits (cherry, raspberry) with garrigue herbs (thyme, rosemary), black pepper and violet. Silky texture, elegant, supple tannins and a long, spicy-mineral finish.

Western: herb-roasted lamb, grilled beef, ratatouille, Provençal chicken, aged Manchego or Comté. Asian: Korean BBQ (galbi), char siu or Cantonese roast pork, five-spice duck, Sichuan-style braised beef.
Production Method
Hand-harvested; éraflage total (full destemming), fermentation with native yeasts in concrete vats, gentle extraction; aged in cement/neutral vessels; no new oak; biodynamic viticulture, minimal added sulphites at bottling.
