Tasting Note

Ripe plum and blackberry core with violets, mint and garrigue herbs; saline minerality, fine sandy tannins and a long, spicy finish. Elegant yet concentrated.

Western: roast lamb, grilled ribeye, beef stew, ratatouille. Asian: char siu (Cantonese BBQ pork), Peking duck, Korean BBQ (galbi), spicy Szechuan lamb, miso-glazed aubergine.
