Ripe plum and blackberry core with violets, mint and garrigue herbs; saline minerality, fine sandy tannins and a long, spicy finish. Elegant yet concentrated.

Western: roast lamb, grilled ribeye, beef stew, ratatouille. Asian: char siu (Cantonese BBQ pork), Peking duck, Korean BBQ (galbi), spicy Szechuan lamb, miso-glazed aubergine.
Production Method
Biodynamic viticulture; hand-harvested; total destemming with light crushing; native-yeast fermentation and élevage in concrete tanks; no new oak.
Vineyard Info
Domaine Montirius (Christine & Eric Saurel), family estate around Gigondas/Vacqueyras; early biodynamic pioneers producing terroir-driven, low-intervention wines from old Grenache and Mourvèdre vines.
