Tasting Note
Dense purplish core; aromas of blackberry, blueberry, plum, dark chocolate, mocha and sweet spice. Silky, full-bodied palate with ripe dark fruit, savory herbs and pepper, polished tannins and a long, creamy finish.
Food Pairing
Western: grilled ribeye, roasted lamb, braised short ribs, aged Manchego, dark chocolate. Asian: Korean BBQ (bulgogi), Cantonese char siu, Sichuan mapo tofu, grilled shiitake and miso-glazed aubergine.
Production Method
Hand-harvested, grape-by-grape selection; fermented and aged ~18 months mainly in new French oak (racked three times). Minimal filtration before bottling.
