Tasting Note
Dense, full-bodied Carmenère showing blackberry, black plum, raspberry, dark chocolate, cigar-box and black pepper notes with ripe, silky tannins and a long spicy finish.
Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, osso buco, aged cheddar. Asian: Korean BBQ (galbi), Cantonese char siu, spicy Sichuan beef, yakitori and hoisin-glazed pork.
Production Method
Hand‑harvested with grape‑by‑grape selection; fermented and matured about 18 months in French oak barrels (mix of new and used); minimal filtration; blended with Petit Verdot.
