Tasting Note
Dense black and blue fruit (blackberry, blueberry), black pepper, leather, tobacco, dark chocolate and vanilla. Full-bodied with ripe yet refined tannins, lively acidity and a long, savory finish.

Food Pairing
Western: grilled ribeye, roast lamb, venison, braised short ribs, charcuterie and aged cheeses. Asian: Korean BBQ, char siu (barbecued pork), Cantonese roast duck, spicy Sichuan beef or dan dan noodles.

Production Method
Hand-harvested and rigorously sorted; de-stemmed with a 7-day cold soak, fermented with selected yeasts, then matured 14–18 months in French oak (≈70% new).
