Tasting Note
Concentrated black and blue fruits (blackberry, blueberry) with violets, black olive and pepper. Dark chocolate, tobacco and espresso from oak; full-bodied, structured, with refined chewy tannins and a very long finish.

Food Pairing
Western: grilled ribeye, roasted lamb, braised beef, pork chops, charcuterie, aged/melted cheeses. Asian: Korean BBQ (bulgogi/galbi), char siu, Peking duck, spicy Sichuan beef, Indonesian beef rendang.

Production Method
Hand-harvested and rigorously sorted Syrah from steep granitic slopes; fermented and aged approximately 18 months in new French oak barrels before bottling.
