Tasting Note
Concentrated dark-fruit core of blueberry, blackberry and black plum with smoked bacon, black pepper, dark chocolate and subtle violet florals; dense, velvety texture with dusty tannins and a long, savory finish.

Food Pairing
Western: grilled lamb, roast beef, venison, charcuterie and aged cheeses. Asian: Korean BBQ, Sichuan-style beef, char siu pork, teriyaki beef skewers and rich yakitori.

Production Method
Hand-harvested Syrah from steep Apalta slopes; fermented with careful selection and aged ~14–18 months in French oak (majority new barrels). Dry-farmed on granitic soils with minimal irrigation.
