Tasting Note
Deep ruby; ripe blackcurrant, cherry and cassis with tobacco, cedar, dark chocolate and hints of black pepper. Full-bodied, silky yet structured with polished, grippy tannins and a long, savory finish.

Food Pairing
Grilled ribeye, roasted lamb, aged Manchego or Parmesan; Asian: Korean BBQ (bulgogi), char siu, Sichuan-style beef or grilled yakitori (beef) dishes.

Production Method
Hand-harvested, fermented as a Bordeaux-style blend; ~18 months aging in French oak (70% new, remainder 2nd/3rd use). Limited-production selection.
