Tasting Note
Ripe tropical and orchard fruits—pineapple, green apple, lemon curd—layered with toasted vanilla and hazelnut from gentle oak. Creamy, medium‑full palate with bright acidity, subtle saline minerality, and a long, elegant finish.

Food Pairing
Western: grilled lobster, roasted chicken, creamy pasta, risotto, aged cheeses. Asian: miso‑glazed salmon, tempura prawns, sushi (salmon/tuna), Thai green curry with chicken, creamy coconut-based dishes.

Production Method
Cool fermentations in stainless steel, concrete and French oak; ~30% fermented/aged 12 months in French (some new) barrels; limited malolactic to retain freshness.
