Tasting Note
Layered nose of blackberry, cassis, fig, dark chocolate, cedar and tobacco with subtle pepper. Full-bodied, ripe black-fruit midpalate, integrated French-oak spice, polished tannins and a long, savory finish.

Grilled ribeye, roast lamb, braised short ribs, hard cheeses; Asian: Mongolian beef, Korean BBQ (bulgogi), char siu, Szechuan beef, beef stir-fries.

Production Method
Temperature-controlled fermentation; matured ~12 months in French oak barrels (≈50% new); minimal intervention prior to bottling.
