Tasting Note

Bright red cherry and raspberry with rose petal, loamy earth and baking spice; silky texture, firm fine-grained tannins and a saline, slightly spicy finish.


Food Pairing

Western: roast lamb, duck breast, mushroom risotto, beef bourguignon, charcuterie and aged cheeses. Asian: Peking duck, char siu, teriyaki salmon, yakitori, mushroom soba and Korean bulgogi.


Production Method

Hand-harvested, fully destemmed; open-top fermentation with indigenous yeasts; aged 12–18 months in oak (≈30% new, demi-muids); light filtration. Estate practising biodynamic viticulture (in conversion).
