Tasting Note

Fresh red cherry and raspberry, violet and light baking spice, subtle earthy/forest-floor notes, medium-bodied with bright acidity, silky texture, discreet oak and a clean, moderate finish.

Western: roast duck, lamb, mushroom risotto, pork tenderloin, beef carpaccio. Asian: Peking duck, char siu, teriyaki salmon, miso-glazed aubergine, yakitori (grilled chicken skewers).


Production Method

Vines farmed organically/biodynamically; hand-harvested, fully destemmed, fermented in thermo-regulated vats (stainless/open), gentle extraction; aged ~12–15 months in French oak (minor % new).
