Tasting Note
Intense ruby with black cherry and plum, licorice, violet, dark chocolate and mineral/graphite notes. Silky yet structured palate of ripe black fruit, firm tannins, spice and a long, mineral-etched finish.

Food Pairing
Roast lamb, grilled ribeye, beef stew, aged Manchego, mushroom risotto; Asian: Peking duck, Korean BBQ (galbi), char siu, braised Sichuan beef.

Production Method
Hand-harvested; grapes largely destemmed; fermentation with native yeasts and extended maceration (28–40 days); malolactic in French oak; aged 16–27 months in French oak (part new).
