Tasting Note
Concentrated black-fruit (blackberry, cassis), chalky/mineral limestone notes, violet and licorice, integrated French-oak spice, firm fine tannins, fresh acidity and a long savory finish.

Hand-harvested; fermentation with native yeasts in temperature-controlled vats; malolactic in French oak; aged ~16–20 months in Allier/French oak (c.30% new) with some foudre/concrete use; minimal filtration.
