Tasting Note
Bright ruby with concentrated red and black fruit (cherry, plum, cassis), mineral and licorice notes, vanilla and spice. Silky yet structured palate, lively acidity, velvety tannins and a long cocoa- and smoke-tinged finish.

Production Method
100% destemmed; long cold pre-fermentation maceration (~30 days); fermentation in separate lots; aged ~18 months in Allier French oak barrels; organic viticulture practices.

Hacienda Monasterio (est. early 1990s) is a 160-hectare estate between Pesquera and Valbuena de Duero. Founded under Peter Sisseck’s direction; practices organic viticulture and selects multiple plot soils for blending.
