Tasting Note
Intense floral aromatics (orange blossom, jasmine) with citrus zest, white peach and passion fruit, saline minerality, white pepper and herbal spice; crisp, medium-bodied, dry with a persistent, mineral finish.
Food Pairing
Western: grilled prawns, roasted white fish, goat cheeses, roasted chicken, Iberian charcuterie and mild hard cheeses. Asian: sushi/sashimi, Vietnamese spring rolls, Thai green curry, spicy Szechuan dishes, Korean BBQ.
Production Method
Hand-harvested Moscatel, pressed in traditional olive-oil presses with esparto mats; fermented with indigenous yeasts in stainless steel and aged ~9 months in tank. Minimal-intervention winemaking.
