Tasting Note
Lustrous amber-honey Moscatel with dried apricot, orange marmalade, honey, toffee and orange-blossom notes; hints of bay leaf and saline minerality. Velvety, concentrated sweetness balanced by fresh acidity and a long, elegant finish.
Food Pairing
Western: blue cheeses (Roquefort), almond cake, crème brûlée, fruit tarts, foie gras. Asian: mango sticky rice, Thai coconut desserts, mildly spiced Szechuan or Cantonese dishes, Indian sweets (gulab jamun).
Production Method
Hand-harvested Moscatel grapes are sun-dried (asoleo) on mats, pressed in traditional oil presses with esparto, fermented with indigenous yeasts in 225L wooden barrels and aged about 20 months.
