Tasting Note
Medium pink with bluish reflections. Ripe raspberries, crushed strawberries and late-summer blueberries, floral rose and violet notes, with gingerbread and cocoa powder. Tender, supple palate with delicate astringent finish.

Food Pairing
Western: lobster, smoked salmon, roasted poultry, duck breast, soft cheeses. Asian: salmon nigiri/sashimi, tempura, spicy Thai salads, pork belly bao.

Production Method
Traditional bottle fermentation (méthode champenoise); 13% red wine added for color/structure; aged ~6 years on lees, disgorged and rested ≥6 months; dosage 5 g/L (Extra Brut).
