Tasting Note

Lusciously sweet with intense apricot, honey and citrus (orange peel) flavors, tropical pineapple notes and minerality. Vivid acidity balances the syrupy texture for a bright, long finish.

Western: foie gras, blue and triple-cream cheeses, fruit tarts, crème brûlée. Asian: mango sticky rice, spicy Thai curries (contrast), Sichuan-spiced dishes, sweet-savoury Chinese roast pork, sushi with citrus/yuzu sauces.


Production Method

Hand-harvested when grapes freeze on the vine, pressed frozen to concentrate sugars; cold, slow fermentation (stainless steel) producing high residual sugar and low alcohol.
