Tasting Note
Deep garnet with purple highlights. Aromas of blackcurrant, Morello cherry, cedar, pencil shavings and smoke. Medium–full body with firm, grainy tannins, mineral backbone, silky texture and a very long, energetic finish.
Food Pairing
Western: roast lamb, beef ribeye, venison/game, aged hard cheeses. Asian: Peking duck, Cantonese char siu, Korean BBQ (galbi/bulgogi), braised soy-ginger beef, shiitake/mushroom hot pot.
Production Method
Hand-harvested; fermented in temperature-controlled vats; élevage in French oak (68% new) prior to bottling (bottled May 20–22, 2019). Estimated élevage ~18–20 months.

Historic Grand Cru Classé de Graves estate in Pessac-Léognan; modernised under the Woltner family and owned by Domaine Clarence Dillon since 1983. Renowned for concentrated, terroir-driven wines.
