Tasting Note

Deep garnet. Aromas of crushed blackcurrant, black cherry, dark chocolate, tobacco and forest floor. Medium-to-full bodied, with fine-grained chewy tannins, lively acidity, concentrated dark fruit and a long, mineral, smoky finish.

Roasted lamb, beef Wellington, grilled ribeye, duck confit; Asian: Peking duck, char siu, Korean BBQ (galbi), mushroom and soy-braised short ribs.

Hand-harvested; temperature-controlled fermentation; malolactic conversion; aged 18–22 months in French oak (majority new barrels).
