Tasting Note

Concentrated black cherry and cassis with violet, tobacco, graphite and forest-floor notes. Silky, ripe tannins, bright acidity and a mineral, savory finish — long, elegant and terroir-driven with dark chocolate and spice echoes.

Food Pairing

Western: roast lamb, beef ribeye, duck confit, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, Korean BBQ short ribs, miso-glazed eggplant, braised beef with soy and star anise.

Production Method

Hand-harvested grapes; traditional fermentation with temperature control and extended maceration; aged ~18 months in French oak (approx. 70% new) before blending and bottling.
