Tasting Note
Intense blackberry and blackcurrant with cigar, cedar, coffee and licorice. Full-bodied and concentrated, with ripe, powdery tannins, fresh acidity and an expansive, very long finish.
Food Pairing
Roast lamb, beef tenderloin, duck confit; western-style game dishes. Asian pairings: Peking duck, char siu, Korean BBQ short ribs, rich mushroom or soy-braised beef, spicy Sichuan beef.
Production Method
Hand-harvested (Sept 7–29), fermented in temperature-controlled vats, élevage ~18 months in 80% new French oak; bottled June 2008.
