Tasting Note
Exuberant, deep purplish color. Aromas of raspberry, blackberry, cigar, cedar, coffee and licorice. Soft entry that expands to concentrated fruit, very ripe tannins, bright freshness and an immeasurably long, evolving finish.
Food Pairing
Western: roast lamb, côte de boeuf, venison, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ, Szechuan-style beef, hoisin-glazed pork.
Production Method
Hand-harvested; fermented in temperature-controlled vats; matured ~20 months in French oak (80% new); bottled June 2008.
