Tasting Note
Very dense black fruit (blackberry, cassis) with graphite, tobacco, earth and Indian spice notes; silky, creamy tannins, bright freshness and a long, mineral finish.

Roast lamb, beef ribeye, venison, mushroom risotto, aged cheeses (western); Peking duck, char siu (Cantonese roast pork), Korean BBQ (bulgogi/galbi), Szechuan beef (asian).
Production Method
Hand-harvested; fermented in temperature-controlled vats; extended élevage in French oak (≈87% new) and bottled June–July 2007.

Historic Cru Classé estate in Pessac-Léognan, sister property to Château Haut-Brion; owned by Domaine Clarence Dillon with roots back to the Lazarists and enhanced under the Woltner family.
