Tasting Note

Concentrated blackberry and cassis with violet, white/black pepper and a touch of smoked meat; silky texture, delicate oak spice, fresh mineral lift and a savory, slightly peppery finish.

Western: grilled lamb chops, roast beef, charcuterie, mushroom risotto, aged tomme. Asian: Korean BBQ (bulgogi), Cantonese char siu, Sichuan-style beef with pepper, yakitori/robata grilled skewers.


Production Method

Hand-harvested Syrah from granite slopes; partial destemming, cold maceration, native-yeast fermentation (18–21 days), then ~12 months in French oak barrels (mostly used barrels), no new oak.
