Tasting Note
Perfumed red and black cherry, rose petal, truffle and exotic spice. Silky, medium–full palate with concentrated plum/raspberry fruit, subtle earth and liquorice notes, framed by fine oak and a long savory finish.

Food Pairing
Western: roast duck, venison, beef cheeks, mushroom risotto, aged Comté or Époisses. Asian: Peking duck, char siu, soy-braised short ribs, miso-glazed eggplant, mushroom hot pot.

Production Method
Hand-harvested; short cold maceration, 18–20 day cuvaison with remontage and pigeage; élevage ~16 months in French oak (≈50% new).
