Tasting Note
Medium-bodied Pinot Noir with black cherry, raspberry and darker black-fruit notes, floral lift, sweet spice and vanilla/toffee accents; firm, elegant structure and a persistent, slightly savory finish.

Food Pairing
Western: roast duck, beef bourguignon, mushroom risotto, roasted lamb, charcuterie and aged cheeses. Asian: Peking duck, miso-glazed black cod, char siu, soy-glazed wagyu, Korean BBQ short ribs, teriyaki salmon.

Production Method
Fully destemmed fruit, cold pre-fermentation soak (3–5 days), alcoholic fermentation ~18–20 days in stainless steel, aged 14–15 months in French oak (approx. 50% new).

Domaine Michel Noëllat is a multi-generational Vosne-Romanée family estate (23–27 ha) producing dozens of Côte de Nuits appellations; Les Beaux Monts sits on a pebble-rich, SE-facing slope (270–310m). The domaine has modernized vinification while retaining traditional viticulture.
