Tasting Note

Deep magenta; dominant spice (black pepper, licorice) with dark cherry and plum. Powerful, concentrated palate, grainy yet ripe tannins and a long, persistent finish.

Food Pairing

Western: entrecôte, roast lamb, beef bourguignon, braised short ribs, aged cow’s cheeses. Asian: Peking duck, char siu (barbecue pork), Korean BBQ (bulgogi/galbi), soy-braised pork, mushroom hot-pot/stir-fries.

Production Method

Hand-harvested; 100% destemming; 3–5 day cold pre-fermentation; 18–20 day fermentation in temperature-controlled stainless-steel vats; aged 12 months in French oak (30% new); bottled at the domaine.
