Tasting Note
Ripe dark cherry and raspberry with pressed violets, subtle iron minerality, warm spice and gentle oak. Medium‑full body, silky texture, balanced acidity and moderate tannins; savory, lingering finish.

Food Pairing
Western: roast côte de bœuf/ribeye, magret de canard, mushroom risotto, aged cheeses. Asian: Peking duck, soy‑glazed pork belly, miso‑glazed cod, mushroom hot pot, Korean BBQ (bulgogi).

Production Method
Hand-harvested; 100% destemmed; cold pre-fermentation 3–5 days; fermented in temperature‑controlled stainless steel 18–20 days; aged 12 months in French oak (30% new); bottled at the domaine.

Family domaine founded by Félix Noëllat (19th century). Now run by Sébastien and Sophie Noëllat. This cuvée from ~1.6 ha, average vine age ~50 years on clay‑limestone soils.
