Tasting Note
Deep ruby; aromas of peony, rose, ripe cherry, raspberry and plum with hibiscus and subtle oak. Elegant, fresh palate with fine-grain tannins, bright acidity and a long, mineral-tinged finish.

Western: roast lamb, magret de canard, coq au vin, mushroom risotto, aged cheeses. Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed salmon, mushroom ramen, Korean BBQ (bulgogi or galbi).
Production Method
Hand-harvested, 100% destemmed; cold pre-fermentation 3–5 days; fermentation 18–20 days in temperature-controlled stainless steel vats; aged ~12 months in French oak (30% new); bottled by the domaine.
