Tasting Note
Ripe black-cherry and black-fruit core with baking spice, subtle floral lift and pastry notes; balanced, silky tannins, fresh acidity and a savory, mineral finish.

Food Pairing
Western: roast duck, pan-seared lamb, beef Bourguignon, mushroom risotto, soft and washed-rind cheeses. Asian: Peking duck, char siu pork, miso-grilled salmon, soy‑glazed mushrooms, ramen with pork broth.

Production Method
Fully destemmed; cold pre-fermentation maceration 3–5 days; cuvaison 18–20 days in stainless steel; aged 12–13 months in oak (≈30% new).

Domaine Michel Noëllat, family estate based in Vosne-Romanée, founded 19th century; Morey-Saint-Denis village cuvée from ~1 ha parcel (vines ~10 years). Family succession to Alain and Jean‑Marc Noëllat.
