Bright pale-yellow; mineral-driven with lime, yuzu and citrus zest, saline edge, medium-plus body and a clean, salivating finish.

Food Pairing
Western: scallops, oysters, roast chicken, goat cheese, mushroom risotto. Asian: sashimi/sushi, tempura, steamed fish with ginger & scallions, Thai seafood salad.

Production Method
Hand-harvested, stemmed pressing, 24h settling in temperature-controlled stainless vats; native-yeast fermentation and aged in 30% new demi-muids.
