Tasting Note
Bright cherry and strawberry with earthy undergrowth, silky texture, fresh acidity, subtle spice and stony minerality; medium-bodied and approachable now with development potential.

Food Pairing
Western: roast lamb, beef bourguignon, duck breast, mushroom dishes, aged cheeses. Asian: Peking duck, char siu, teriyaki duck, mushroom hot pot, grilled yakitori, pork buns.

Production Method
100% destemmed Pinot Noir with cold pre-fermentation maceration; fermented in temperature-controlled vats and aged ~12–18 months in French oak barrels (portion new).
