Tasting Note
Pear, green apple, quince and citrus zest with toasted oak, nutmeg and a wet-stone/mineral edge. Medium–full, satiny texture, racy acidity and saline, stony finish with impressive concentration and length.
Food Pairing
Western: roast chicken with herb butter, lobster or scallops, creamy pasta or mushroom risotto, soft Brie-style cheeses. Asian: miso-glazed cod, seared scallops with soy-ginger, tempura prawns, steamed fish with ginger and scallions, sushi (fatty tuna).
Production Method
Whole-cluster pressing, gentle settling, fermentation and aging in French oak (c.15–30% new), malolactic conversion, regular lees stirring; matured ~12 months, lightly fined and filtered.

Family domaine dating to the 19th century; Michel Niellon led from the 1960s. Estate (~7–8 ha) in Chassagne-Montrachet; now run with family (Michel Coutoux, Mathieu, Lucie) practicing sustainable viticulture.
