Tasting Note

Red and black cherry, plum, rose petal, fine red-berry spice, saline/mineral oyster-shell note, subtle cocoa and woodsmoke, filigreed tannins and a persistent peppery, mineral finish.

Hand-destemmed fruit; ambient-yeast fermentations with 2–3 week cuvaison; aged ~18 months in oak (≈15% new); organic/biodynamic viticulture; rarely fined or filtered.
