Tasting Note

Mineral-driven Puligny: lemon, green apple, wet stone, sea‑spray/iodine hints, flinty reduction, vibrant acidity, textured mid‑palate and a long saline finish.


Food Pairing

Western: roasted chicken, sole meunière, scallops, lobster with beurre blanc, mushroom risotto, soft cheeses. Asian: miso‑glazed black cod, sashimi/otoro, tempura prawns, soy‑ginger sea bass, light Thai coconut fish dishes.


Production Method

Hand‑harvested Chardonnay; gentle pressing; barrel fermentation and élevage (~16–18 months) in 350–600L oak with ~30–33% new wood; minimal bâtonnage.


Vineyard Info

Bouzereau family (seven generations) based in Meursault; Jean‑Baptiste manages ~12–13 ha. Cailleret parcel is tiny (~0.13–0.14 ha) and farmed sustainably/organically.
