Tasting Note

Ripe orchard and stone fruits, white flowers, toasted almond and honeyed butter with flinty minerality. Rich, creamy mid‑palate balanced by bright acidity and a long, mineral-driven finish.

Western: lobster or scallops with beurre blanc, roast chicken or veal in cream sauce, morel mushroom risotto, soft-ripened cheeses. Asian: miso-glazed black cod, sushi/sashimi (fatty tuna), Cantonese steamed fish, mild Thai coconut curries and soy-butter ginger prawns.


Production Method

Hand-harvested Chardonnay; whole-bunch pressing, fermentation in French oak barrels (≈25–30% new) with indigenous yeasts, malolactic fermentation and 15–18 months ageing on lees; minimal-intervention winemaking.
