Tasting Note

Bright lemon‑curd and white‑peach fruit, acacia florals, flinty mineral lift, creamy mid‑palate, vibrant acidity and saline, long precise finish.


Food Pairing

Western: lobster, pan‑fried chanterelles, salmon with sorrel, roast poultry, triple‑cream cheeses. Asian: miso‑glazed black cod, tempura prawns, steamed sea bass, Cantonese‑style roast chicken, sushi (fatty tuna).


Production Method

Hand‑harvested, whole‑cluster pressing; fermented and aged in French oak barrels (≈30% new); full malolactic conversion; 12–18 months on fine lees.
