Tasting Note

Medium-bodied Pinot Noir: morello and red cherry, cranberry, violet florals, subtle sous-bois and herbal notes, bright acidity, fine tannins and a fresh, mineral-tinged finish.

Western: roast duck, beef bourguignon, pork tenderloin, mushroom ragout, game birds; Asian: Peking/hoisin duck, char siu pork, miso-glazed salmon, mushroom ramen, bulgogi with shiitake mushrooms.


Production Method

Hand-harvested, fermented in vats/optional open-top fermenters, matured ~12 months in French oak (≈30% new) then rested in vats — minimal intervention.
