Tasting Note

Concentrated black-berry and currant fruit with truffle, iron and smoky oak; perfumed, savory mid-palate, fine ripe tannins and a very long, tight finish. Youthful and built for long aging (decades).

Food Pairing

Roast lamb, beef bourguignon, mushroom risotto, aged Comté; Asian: Peking duck, char siu or hoisin-glazed short ribs, grilled wagyu or miso-seared dishes.

Production Method

100% destemmed, fermented with early pumping-over and later punchdowns; matured entirely in new French oak (light toast); traditional Burgundian vinification.
